Mastery and Flavor at Mercado de San Miguel: Jamón Carving Masterclass with Carrasco Guijuelo
Today we enjoyed a truly unique experience at Madrid’s Mercado de San Miguel with an exclusive jamón carving masterclass led by Carrasco Guijuelo, showcasing their gastronomic gem: the Solera jamón, aged for 48 months. It was a true lesson in tradition, technique, and flavor.
The event brought together a select group of guests, including journalists and renowned figures from the culinary world, who had the chance to discover the secrets of proper carving and to taste the different cuts of this exceptional ham, each paired with a carefully selected wine or champagne.
The tasting began with an elegant Brut Majeur Champagne from Ayala, followed by the freshness of Albariño from Pazo de San Mauro, and concluded with the richness of a Marqués de Vargas Reserva red wine (D.O. Rioja)—each pairing chosen to highlight the unique textures and nuances of the jamón.
Throughout the session, attendees learned how to properly place the leg on the ”jamonero”, the art of slicing, the characteristics of each part of the ham, and the rich history of Carrasco Guijuelo, a family-run business with over 125 years of tradition.
Special guests included David de Jorge, “Robin Food”, a renowned chef and brand ambassador, and Guillermo Carrasco, representing the fifth generation of the Carrasco family, who shared insights into the brand’s evolution over the years.
A morning that celebrated the excellence of Iberian ham and the passion behind its craftsmanship.
